One of Julia’s fondest memories growing up in Saratoga Springs, NY was spending time in her grandfather’s garden picking tomatoes and pole beans, and then sitting in the kitchen watching her grandmother transform that freshest of produce into wonderful Italian family meals.
Although Julia showed a love for food early on in life, her career path did not initially reflect it. As an accomplished young equestrian show jumper growing up across the street from historic Saratoga Racecourse, a lifestyle of good nutrition and fitness became essential for top performance in horseshows up and down the east coast. Attending American University in Washington, D.C., Julia found a natural extension of her early years and earned both Bachelors and Masters degrees in Health Promotion Management.
After five professional years in personal and corporate wellness roles in NYC, she decided to follow her underlying passion and enrolled at The Natural Gourmet Institute, a health-supportive culinary school. Post grad, Julia worked as a line cook at The Mercer Kitchen in SoHo, which boasts a mediterranean, asian-fusion menu. Then, seeing an opportunity to combine all of her professional training, she operated the New York branch of Running With Forks, a personal chef business providing customized weekly menus tailored to personal, dietary needs such as weight management, vegan, gluten free, GI conditions, and other specific health conditions.
Julia went on to become one of the first hired chefs to work with celebrity chef, Rocco Dispirito on his weight loss program and cookbook, The Pound a Day Diet. There, she served as a daily personal chef for high-profile clients such as Whoopie Goldberg, Joy Behar, Sheri Shepard, and The Kardashian Family.
Julia is currently the Assistant Manager of Food and Dining Services for The Brearley School, a prestigious private girls school in Manhattan. There, she creates menus that reflect the broad, ethnic backgrounds of its diverse student body with the focus of providing healthy, high-quality, and nutrient dense meals for Brearley’s 1,000 students, faculty, and staff each day. In 2016, Julia founded Paddock to Porch in order to capitalize on her expanding personal chef business in NYC and summer catering gigs in Saratoga Springs, NY.
